The green tea used in this chocolate, Koicha, is significantly stronger than green tea, the texture (and caffeine content) similar to strong italian espresso. koi means “thick”, while cha means “tea”, so koicha literally means “thick tea”. The consistency has been likened to hot chocolate as well. Koicha is only made from tea plants older than thirty years, which attributes to the intense flavour.
A study in 2003 found that the concentration of antioxidants available from drinking matcha is at least three times greater than the amount of available from other commercially available green teas.
The white chocolate used for this creation comes from Belgian confectioner Callebaut, whose chocolate is made with 100% sustainably cultivated cocoa beans.
